Easy BBQ Chicken Skewers with Mozzarella and Basil

I first cooked this on a warm summer evening while camping in Spain. We grilled on a skottelbraai as the sun set, the children played nearby, and I wanted something simple but delicious. These skewers were an instant hit: a little different than a classic kebab, easy to assemble and quick to grill.

Serve them with fresh ciabatta and a light Caprese-style salad, or alongside a green salad and grilled vegetables for a full summer spread. They’re versatile — great for a family dinner, weekend barbecue, or when you want a no-fuss meal that still feels special.

Tips for Making Grilled Chicken Mozzarella Skewers with Tomato

These simple pointers help ensure the best result every time.

  • Use buffalo mozzarella for a creamier, more flavorful filling. Let it warm to room temperature for easier handling and better melting.
  • No meat mallet? A rolling pin, wine bottle, or a heavy pan works well to flatten the chicken evenly.
  • Soak wooden skewers for at least an hour before grilling to reduce burning. Metal skewers don’t need soaking and transfer heat well.
  • Grill the cherry tomatoes with the chicken — they caramelize, become sweeter, and add a lovely smoky contrast to the cheese.

Ingredients

  • 1.1 lbs (about 500 g) chicken breast
  • 1 cup buffalo mozzarella, cut into small strips
  • ½ oz fresh basil (a handful of leaves)
  • 2 oz cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper

Instructions

  1. Slice the chicken breasts into long, thin strips. Place each strip between two pieces of plastic wrap and gently pound with a mallet or rolling pin until thin and even.
  2. Cut the mozzarella into small strips (about ½ × ¾ inch / 1 × 1½ cm). Wrap each mozzarella piece in one or two basil leaves to form little parcels.
  3. Place a mozzarella parcel at the end of a chicken strip and roll the chicken around it. Repeat until all chicken and cheese are used.
  4. Thread three chicken rolls onto each skewer, adding a cherry tomato between rolls for colour and flavour.
  5. Brush the skewers lightly with olive oil and season with salt and pepper.
  6. Grill on a hot barbecue or grill pan for 8–10 minutes, turning frequently until the chicken is golden and cooked through. Serve immediately while the mozzarella is soft and slightly melted.

Notes

  • No grill? Use a grill pan or finish under a hot oven broiler until golden and cooked through.
  • Other vegetables: Add bell pepper or zucchini slices to the skewers if you like.
  • Turkey variation: Turkey breast works well as an alternative to chicken.
  • How to check doneness: Chicken should be white and firm inside, with no translucent pink areas.
  • Make-ahead: Assemble skewers a day in advance and keep covered in the fridge. Cooked skewers keep in an airtight container for up to two days.
  • Reheating: Warm gently in a 350 °F (180 °C) oven for about 10 minutes or reheat in a skillet until heated through.
  • Optional flavour boost: Spread a little pesto on the chicken before adding the mozzarella for extra herbaceous flavour.
