Glazed Cranberry-Lemon Crystallized Ginger Loaf

Adapted from a classic glazed cranberry quick bread recipe.

Ingredients

For the Bread:

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 ounces unsalted butter, softened
  • 1 1/3 cups granulated sugar
  • 1 tablespoon grated lemon zest
  • 3 large eggs
  • 1/4 cup plus 1 tablespoon milk
  • 1 cup fresh or frozen cranberries, picked over
  • 1/4 cup finely chopped crystallized ginger (coat your knife with a little cooking spray if it sticks)

For the Glaze:

  • 3/4 cup powdered (confectioner’s) sugar
  • 4 1/2 teaspoons fresh lemon juice
  • 1/2 teaspoon grated lemon zest
  • Pinch of salt

Preparation

Preheat the oven to 325°F (163°C). Grease an 8 1/2- by 4 1/2-inch loaf pan or line it with parchment paper and grease the paper. (You can also use two smaller loaf pans if preferred.)

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In the bowl of a stand mixer or a large bowl with a hand mixer set on medium speed, beat the softened butter and granulated sugar until light and fluffy. Add the lemon zest and then the eggs, one at a time, beating to combine after each addition and scraping the sides of the bowl as needed.

Reduce the mixer speed to low and add the flour mixture and milk in three additions, mixing just until combined—do not overmix. Using a spatula, fold in the cranberries and chopped crystallized ginger gently so they are evenly distributed without crushing the berries.

Pour the batter into the prepared pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs attached. Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool for about 1 hour.

While the loaf cools, whisk together the powdered sugar, fresh lemon juice, lemon zest, and a pinch of salt until smooth and lump-free to make the glaze. Drizzle the glaze over the cooled loaf and let it set before slicing.
