Chicken Ramen Noodles

Ingredients

  • 2 8 oz chicken breasts, skinless and boneless
  • 4 packets ramen noodles, instant variety (3 oz each)
  • 1/2 cup flour
  • 1 egg, beaten
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Preheat the oven to 375° F (190° C).
  2. Prepare three shallow bowls for breading: one with the flour, one with the beaten egg, and one with the panko breadcrumbs. Dredge each chicken breast first in flour, then in the egg, letting excess drip off, and finally in the breadcrumbs to coat evenly.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the breaded chicken breasts and brown each side for about 4–5 minutes until nicely golden.
