Homemade Red Pepper Flatbread Crackers

Ingredients

  • 1 ¾ cups all-purpose flour, plus extra for work surface
  • 1 teaspoon baking powder
  • ¾ teaspoon kosher salt
  • ½ teaspoon crushed red pepper flakes
  • ½ cup water
  • ⅓ cup extra virgin olive oil
  • Extra olive oil, salt, and additional crushed red pepper flakes for brushing and sprinkling

Instructions

  1. Preheat the oven to 450°F. Place a heavy baking sheet on the middle rack. Lightly flour your work surface.
  2. In a medium bowl whisk the flour, baking powder, kosher salt, and crushed red pepper flakes. Make a well in the center and add the water and oil. Stir until a dough forms, then turn out onto the floured surface and knead gently until smooth.
  3. Divide the dough into six equal portions. Keep the pieces you’re not working on covered. Take one portion and divide it into four pieces. Roll each piece into a long oval and flatten very thin with a rolling pin. Prick several times with a fork and place on parchment paper. Repeat until you have eight pieces on the parchment.
  4. Lightly brush each cracker with olive oil and sprinkle with salt and additional crushed red pepper flakes. Slide the parchment onto the preheated baking sheet and bake 5–6 minutes, until browned in spots.
  5. Remove from the oven and cool completely on a wire rack. Repeat with remaining dough.
