- Microwave each ramekin for about 2 minutes, until the sponge is set.
- Allow the cakes to cool, then gently remove from ramekins and slice each cake in half horizontally to make thin sponge discs.
To Assemble
- Whip the cream until it forms stiff peaks, then fold in the powdered erythritol and vanilla.
- Place a sponge disc in the base of each serving glass. Spoon a layer of chia jam over the sponge.
- Arrange sliced strawberries on top of the jam layer to cover the sponge.
