This version uses minced beef, but you can easily swap turkey or pork mince if you prefer. I like adding lots of vegetables to boost fibre and flavour, and the Cajun seasoning gives the dish a smoky, slightly spicy depth.

Step 1 — Fry the mince
Use a large, heavy‑bottomed casserole or pan that can stay on the hob. Add the minced beef along with chopped garlic, onion and celery. Fry on medium heat for a couple of minutes, stirring occasionally, until the mince begins to brown.
Step 2 — Add spices and vegetables
Stir in the Cajun seasoning and chopped carrot, then fry for another 3–5 minutes. Add the diced peppers and sliced mushrooms and continue to cook until the vegetables start to soften.

Step 3 — Add rice and stock
Mix in the uncooked rice and chopped spring onions. Crumble a beef stock cube into hot water, add it to the pan, give everything a good stir, then cover and simmer gently. Cook for 25–30 minutes, stirring occasionally, until the rice is tender and has absorbed the liquid.

Step 4 — Season and serve
Taste and adjust seasoning with salt and black pepper. Scatter the reserved tops of the spring onions over the dish and serve hot.
What to Serve With Cajun Dirty Rice
This dish works perfectly as a complete main course on its own. If you like, serve with a simple side salad, steamed vegetables, sweetcorn or potato wedges. A cooling side such as a green salad or plain yoghurt can balance the spice.

Ingredients
- 500 g minced beef (<5% fat)
- 2 garlic cloves, peeled and finely chopped
- 1 onion, peeled and chopped
- 2 sticks celery, chopped
- 2 teaspoons Cajun spice (or 3 if you like it spicier)
- Salt and black pepper, to taste
- 1 carrot, peeled and cubed
- 1 green pepper, deseeded and chopped
- 1/2 red pepper, deseeded and chopped
- 1/2 yellow pepper, deseeded and chopped
- 125 g mushrooms, sliced
- 200 g white rice (long grain or basmati)
- 100 g spring onions (small bunch), cut into pieces (reserve tops)
- 1 beef stock cube
- 750 ml water
Instructions
- Take a large, heavy‑bottomed casserole that can go on the hob. Add the minced beef, chopped garlic, onion and celery. Fry without extra oil for 2 minutes over medium heat, stirring occasionally.
- Add the Cajun seasoning and chopped carrot. Fry for a further 5 minutes, stirring occasionally.
- Add the peppers and mushrooms and cook for another 5 minutes, until the vegetables soften.
- Crumble the stock cube into the water and stir until dissolved.
- Add the spring onions, dry rice and the prepared stock. Stir well, cover with a lid and cook over low heat for 25–30 minutes, stirring occasionally, until the rice is tender and has absorbed the liquid.
- Once cooked, check seasoning and add salt and black pepper if needed. Sprinkle reserved spring onion tops over the rice and serve hot.
