The flavor base for this recipe is simple and Whole30-friendly. A quick mix of coconut aminos, balsamic vinegar and minced garlic gives the pork a slightly sweet, tangy, savory glaze that complements the bacon. Ingredients

  • 1 pork tenderloin (about 1 to 1.5 pounds)
  • 5 slices of bacon (use Whole30-compliant bacon if following Whole30)
  • 1/3 cup balsamic vinegar
  • 3 tablespoons coconut aminos
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Set the Instant Pot to sauté mode and add the olive oil to the bottom of the pot.
  2. Lay the bacon strips flat, slightly overlapping them on a cutting board.
  3. Place the pork tenderloin on top of the bacon. Season both sides of the tenderloin by rubbing on the onion powder, garlic powder, thyme, rosemary, salt and pepper.
  4. Wrap the bacon around the tenderloin, slightly overlapping the ends of each bacon strip to secure it.
  5. Place the bacon-wrapped pork tenderloin into the Instant Pot and sear for about 2 minutes on each side, until the bacon has started to brown.
  6. While the tenderloin sears, whisk together the minced garlic, balsamic vinegar and coconut aminos to create the cooking liquid.
  7. After searing both sides, pour the liquid into the Instant Pot. Close the lid, set to manual high pressure, and cook for 20 minutes with the steam valve sealed.
  8. When the timer goes off, perform a quick release. Carefully remove the pork tenderloin, let it rest for a few minutes, then slice into medallions and serve.
