This recipe works with any edible conifer tips: new growth from fir, spruce, hemlock, or some pines can all be used. Do not use yew, as it is poisonous — know your trees before harvesting. I most often use Douglas fir tips because they are common in my area, but flavor varies by species and even between trees. Tasting a small nibble while harvesting will help you select tips with flavor notes you enjoy, such as lemon, grapefruit, pine, resin, juniper, or bitter orange.

Making the Fir Tip Lemon Drop
To make this lemon drop variation, plan ahead if you want to use fir-infused ingredients. Fir tip vodka, fir tip sugar, and fir tip simple syrup all add varying degrees of conifer flavor. Cocktail tip
A Lemon Drop Martini is traditionally served “up” (strained into a glass without ice). A coupe or martini glass works beautifully for presentation.
Fir tip simple syrup: In a small saucepan combine 1/2 cup sugar and 1/2 cup water. Simmer until the sugar dissolves, about five minutes. Remove from heat, add about 1/4 cup fresh fir tips, cover, and allow to infuse for at least 20 minutes. Strain out the fir tips and cool the syrup completely before using.


Prepare garnishes: Pour fir tip sugar onto a small plate for rimming the glasses. Prepare lemon slices or a fresh fir tip for garnish.
Juice the lemons: Use freshly squeezed lemon juice for the best bright, clean flavor.
Line the rims: Moisten each glass rim with the cut side of a lemon, then dip and spin the rim in fir tip sugar until the sugar sticks evenly.
Shake it up: In a cocktail shaker or a mason jar with a lid, combine 4 ounces fir tip vodka (or plain vodka), 1 ounce Triple Sec, 2 ounces fresh lemon juice, and 1 ounce fir tip syrup. Variations & substitutions

- Fir tip sugar: If you don’t have fir tip sugar, make a lemon sugar rim by mixing sugar with fresh lemon zest.
- Fir tip syrup: Any simple syrup will work, or substitute honey syrup for a different sweetness profile.

- 1/2 cup sugar

- 1/4 cup fresh fir tips

Instructions
For the fir tip syrup
- Combine water and sugar in a small saucepan and simmer until the sugar dissolves, about 5 minutes.
- Remove from heat, add fir tips, cover, and allow to infuse for at least 20 minutes.
- Strain the syrup to remove the fir tips and let the syrup cool completely before using.
For the cocktail
- Pour fir tip sugar onto a small plate. Moisten the rim of each glass with a cut lemon and dip into the sugar to coat.
- Add vodka, Triple Sec, lemon juice, and fir tip syrup to a shaker with a handful of ice. Shake vigorously until very cold.
- Strain into prepared cocktail glasses, add an optional garnish, and serve immediately.
Notes
Use about 1/2 ounce of fir tip syrup per serving, but add more syrup if you prefer a sweeter cocktail. One batch of syrup should be enough for several drinks.
